GoProvidence.com and the Providence Journal bring you Small Bites: Easy-to-Digest Recipes. Breakfast is one of those meals that we grab quickly on the way to work, or sometimes not at all. Dave's Coffee is here to solve that problem. They have a delicious Roasted Poblano Salsa Breakfast Sandwich that is easy to make. You can even use the leftover salsa with your chips at lunch! Kelsey Garvin, culinary director for Dave's Coffee, shows us this wonderful recipe in the video below.

Roasted Poblano Salsa

- 3 small poblano peppers

- 1 teaspoon olive oil

- 1 1/2 teaspoons salt

- 1/4 red onion, diced

- 3 limes, juiced

- 9 ounces roasted tomatoes

- 1 tablespoon chopped cilantro 

- 1/2 teaspoon smoked paprika

- 1/2 teaspoon black pepper

Lightly coat pepper in olive oil and salt. Roast in oven at 350 degrees until the skin is charred looking. Place directly into a zip top bag and seal. Allow to sit until skin separates, about 10 minutes. 

Remove skin and stems from peppers.

Place peppers and the remaining ingredients into a food processor and blend until combined and smooth.

Makes enough salsa for six sandwiches.

To assemble sandwiches: Make your favorite cornbread recipe or buy muffins. Prepare eggs to your liking. Top egg with queso blanco cheese and roasted poblano salsa.
