Berry Lasagnatta pairs berries with an Italian dessert wine called passito. The berries are macerated in the wine with some sugar as they rest in the fridge. This allows the sugar and wine to sweeten the fruit. He layers the berries on pizzelle cookies, but you can use any wafer cookie. Then he tops it with fresh whipped cream. The beauty of this dessert is that anyone can make it their own. Choose your favorite berries, add more or less wine or sugar, or use your favorite wafer cookie.

Berry Lasagnatta

- 1 1/2 cups sliced strawberries

- 1 cup raspberries

- 1 cup blueberries

- 1/2 cup sugar

- 1/2 cup Passito

- 12 pizzelle or other wafer cookies

- Fresh whipped cream

Mix the berries with the sugar and the wine. Rest it in the fridge for a minimum of 30 minutes to as long as overnight.

To assemble, put a wafer cookie on a plate. Add a layer of berries and another cookie. Repeat. Top with whipped cream.
