'Tis the season for desserts! Ellie's Bakery brings us a simple recipe for the perfect gingerbread cookie. This recipe is used in their gingerbread kits, which are sold to benefit families in need. Check out the video and recipe below to make your very own gingerbread cookies.

Gingerbread Cookies  

- 3 cups all-purpose flour 

- 1 1/2 teaspoon baking powder

- 3/4 teaspoon baking soda

- 1/4 teaspoon salt

- 1 tablespoon ground ginger

- 2 teaspoons ground cinnamon

- 1/4 teaspoon ground cloves

- 1/4 cup unsalted butter

- 3/4 cup dark brown sugar

- 1 egg

- 1/2 cup molasses

- 1 tablespoon vanilla extract

Measure dry ingredients into a bowl and whisk together to combine. 

In the bowl of a stand mixer fitted with a paddle, cream the sugar and room temperature butter until light and fluffy.

Add the egg and scrape down the sides of the bowl. 

Stream in the molasses and vanilla and mix until combined.

Scrape the bottom of the bowl and add the dry ingredients, and mix until well combined.

Wrap in plastic wrap and place in fridge for at least two hours or overnight. 

Preheat oven to 350 degrees.

Dust work surface and rolling pin lightly in flour.

Roll out dough to 1/4” thickness and stamp out desired shapes.

Bake for 10–12 minutes until edges begin to brown (baking time may vary based on size of cookies).

Once cool, decorate as desired with icing/candy/sprinkles.
