Savory Fare Mini Meatloaves

- 1 cup chopped onions

- 1/2 cup, plus 2 tablespoons chopped celery

- 1/2 cup, plus 2 tablespoons chopped red and green peppers

- 5 1/2 tablespoons chopped scallions

- 2 tablespoons butter or oil

- 1 1/3 tablespoons Worcestershire sauce

- 1 1/2 teaspoons salt

- 1/8 teaspoon cayenne pepper

- 1/3 teaspoon black pepper

- 1/4 teaspoon white pepper

- 1 teaspoon ground cumin

- 1/3 teaspoon nutmeg

- 8 tablespoons milk

- 5 1/3 tablespoons ketchup

- 2 large eggs

- 1 cup plain breadcrumbs

- 2 pounds ground beef

Saute onion, celery, peppers and scallions in oil over medium to medium-high heat. Add in salt, cayenne pepper, black pepper, white pepper, ground cumin and nutmeg. Stir in Worcestershire sauce. Remove from heat to cool.

Mix milk, ketchup and eggs with the sauteed mixture and the breadcrumbs in a bowl. Mix well with the ground beef. 

Place in a large (9x3 inch) loaf pan or shape into a loaf on a baking sheet. You can also put them in muffin tins for perfect portions. Cover with foil and bake for 45 minutes at 350°. Uncover and bake an extra 15–30 minutes or until internal temperature reaches 160°.
