Christmas breakfast should be decadent. Something so rich and tasty that it borders on dessert. And these Gingerbread Waffles from Dave's Fresh Marketplace definitely fit that description. With a mascarpone whipped cream and sugared cranberry topping, they're the perfect way to indulge after the stockings have been emptied. Best of all, the batter only takes about 10 minutes to prepare, so you can have a plate of waffles on the table before the kids get bored with their new toys.

Ingredients:
- 2 cups flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon ginger powder
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- Pinch mace
- 2 eggs
- 1/2 cup butter, melted
- 1 teaspoon vanilla extract
- 1/3 cup brown sugar
- 2 cups buttermilk
- Garnish: sugared cranberries/powdered sugar
- Mascarpone whipped cream:
- 4 ounces mascarpone cheese
- 1 cup heavy cream
- 3 tablespoons powdered sugar
- 1 teaspoon vanilla extract
Method of Preparation:
In a large bowl, mix together the flour, sugar, baking powder, baking soda and spices. Set aside.
In another bowl, whisk together the butter and brown sugar. Add the eggs, vanilla and buttermilk.
Add in the flour and mix to combine. Do not overmix.
Cook in a waffle iron. Transfer to a baking sheet and keep warm in a heated oven (200° F).
In a large bowl, beat the mascarpone, heavy cream and vanilla until combined. Gradually add the powdered sugar and beat until stiff peaks form.
Serve the waffles with a dollop of mascarpone whipped cream, sugared cranberries and powdered sugar. Enjoy!
