February 25 is National Clam Chowder Day (although around here we pronounce it a little differently). And while we're deep in the winter doldrums, Dave's Fresh Marketplace's R.I. Clam Chowda is the perfect reminder that warmer days are coming. Add a few clam cakes and an ice-cold 'Gansett, and we'll be in heat wave heaven.

Best of all, you can get all the ingredients in one quick trip to Dave's. And with less than an hour of prep and cook time, you can have a little taste of summer before you know it.

Dave's RI Clam Chowda

Servings: 6     Prep Time: 15 minutes     Cook Time: 35 minutes

Ingredients:

  • 3 slices bacon, diced
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 celery ribs, diced
  • 1/4 teaspoon smoked paprika/dried thyme
  • 1/4 teaspoon salt & pepper
  • 1/4 cup white wine
  • 2 cups clam juice
  • 2 cups water
  • 1/2 pound red bliss potatoes, diced
  • 1/2 pound clams, chopped
  • 1 tablespoon fresh dill, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon chives, chopped

Method of Preparation:

Heat a large pot over medium heat. Add the bacon and cook until crispy. Remove the bacon and set aside.

Add the onions, garlic and celery. Sauté for a few minutes until the onions are translucent.

Add the spices and mix in. Deglaze the pot with white wine.

Add the clam juice, water and potatoes. Bring to a boil, lower the heat to a simmer, and cover until the potatoes are tender.

Add the clams, bacon and fresh herbs. Simmer for about 10-15 minutes before serving. Enjoy!
