Craving something sweet but don't feel like turning on the oven on a hot night? Dave's Fresh Marketplace's Very Berry Icebox Cake is the way to go! Start with a pre-made pound cake, add some fruit, jam and whipped cream and you've got the perfect summer dessert.
Servings: 6 Prep Time: 30 minutes
Ingredients:
- 1/2 carton vanilla ice cream
- 1 Dave's pound cake
- 3 tablespoons triple berry jam
- 1/4 cup fresh blackberries
- 1/4 cup fresh raspberries
- 1/4 cup fresh strawberries
- 1/2 cup heavy whipping cream
- 1 tablespoon powdered sugar
Method of Preparation:
Slice a thin layer off the pound cake to level the top. Horizontally slice into three equal pieces.
Line a loaf pan with parchment paper. Place the first layer of cake in the bottom of the pan.
Cover with a layer of ice cream.
Place approximately 1 tablespoon of jam and swirl into the ice cream.
Place the second layer of cake and repeat ice cream and jam layers.
Top with the third layer of pound cake and place in the freezer for four hours or until frozen.
Beat the whipping cream and sugar together until stiff peaks.
Once frozen, remove cake from pan and top with whipped cream. Swirl in remaining jam.
Garnish top with assorted fresh fruit.
