Fluke Ceviche With Aji Amarillo
- 8 ounces fresh fluke, diced fine
- 4 tablespoons aji amarillo pepper paste
- ¼ cup onion, diced fine
- ¼ cup celery, diced fine
- ½ jalapeño, diced fine
- Juice of 5 limes
- Cilantro leaves
- Salt & pepper to taste
Prepare all the ingredients individually. Gently toss the fish with the pepper paste, onion, celery, jalapeño and lime juice. Marinate for approximately 5-10 minutes. Add salt and pepper to taste. Garnish with cilantro leaves.
