It's that time of year when all the gardens are filled with zucchini. So much zucchini. Whether your family members are sharing theirs or your neighbors are sneaking extra green squash onto your porch at night, you've probably got one question. What to do with it all? Three words: Chocolate Zucchini Bread.
This tasty recipe from Dave's Fresh Marketplace combines the health benefits of zucchini with chocolaty goodness and a cream cheese filling, perfect for a back-to-school snack. It's a little healthy. Cream Cheese Filling:
- 8 ounces cream cheese, softened
- 1/4 cup sugar
- 1 egg
Blend cream cheese, sugar and 1 egg together. Set aside.
Chocolate Zucchini Bread:
- 2 cups flour
- 2 teaspoons baking powder
- 2 teaspoons instant coffee
- 1 teaspoon salt
- 6 tablespoons cocoa powder
- 1/2 cup avocado oil
- 1/2 cup sour cream
- 1 cup sugar
- 4 eggs
- 3 cups grated zucchini
- 2 teaspoons vanilla extract
- 1/2 cup chocolate chips
Preheat oven to 350° F. Spray loaf pans with nonstick spray.
Whisk flour, baking powder, coffee, cocoa powder and salt together.
Combine oil and sugar in a separate bowl.
Add eggs and mix well.
Add sour cream and vanilla extract and blend.
Mix in zucchini and dry ingredients until incorporated.
Fold in chocolate chips.
Fill pans halfway with batter.
Scoop cream cheese filling into each pan.
Spoon remaining batter over cream cheese filling.
Bake for 15–18 minutes or until set and a toothpick comes out dry.
Cool for 10 minutes.
