Who doesn't love a holiday that's all about the food? Sure, there's family too, and it's the one day of the year that you can see a giant Snoopy balloon and your favorite football team in one afternoon. But it's not Thanksgiving without the turkey, stuffing, mashed potatoes, gravy and those sweet potatoes with the little marshmallows. Maybe a little cranberry sauce on the side. Oh, and the pies. Apple, pumpkin, pecan, I'm not picky as long as there's whipped cream for the top. Plus it's one last day of relaxation before the crazy sprint to Christmas begins on Black Friday.

Best of all, Thanksgiving dinner is one of those things that tastes better as turkey sandwiches the next day. And turkey soup the day after that. But once you've exhausted your creative ways to use up those lingering leftovers, try this tasty Thanksgiving Leftover Pie from Dave's Marketplace.

Dave's Thanksgiving Leftover Pie

Servings: Approx. 8     Prep Time: 10 minutes     Cook Time: 25 minutes

Ingredients:

  • 1 sheet puff pastry
  • 1/2 cup mashed potatoes
  • 4–5 tablespoons gravy
  • 3/4 cup leftover turkey, shredded
  • 3/4 cup leftover stuffing
  • 1/4 cup corn
  • 3 tablespoons French fried onions
  • 1/2 cup shredded cheddar cheese
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1 tablespoon fresh parsley, chopped

Method of Preparation:

Preheat oven to 375° F. Lightly spray pie dish with nonstick spray.

Unroll puff pastry and gently press into greased pie pan.

Trim the edges and use the scrap pieces to fill in the empty spaces.

Spread a thin layer of mashed potatoes.

Top with approximately 2 tablespoons of turkey gravy.

Layer your choice of a leftover vegetable. We used corn, but green bean casserole would also be a great choice.

Top with shredded turkey, crumbles of stuffing and 2-3 tablespoons of gravy. Season with black pepper and thyme.

Sprinkle with shredded cheddar cheese. Bake for 18–20 minutes.

Remove from oven, garnish with crispy fried onions. Place back in the oven for 3–5 minutes.

Remove from oven and garnish with fresh parsley. Serve immediately.
